Ethiopian Salad Recipe
super easy
Ingredients:
- 4 ripe tomatoes, diced
- 1 small red onion, thinly sliced (I used half onion for this recipe)
- 4 cloves of garlic, minced with a hint of ginger
- Juice of 1 lemon
- 1 jalapeño pepper, finely chopped
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1 tbs of honey
- Handful of dry cranberries and pumpkin seeds (optional)
Instructions:
1. In a large mixing bowl, combine the diced tomatoes, sliced red onion, minced garlic with a hint of ginger, cilantro and finely chopped jalapeño.
2. In a separate bowl, mix together the minced garlic, hint of ginger, olive oil, black pepper, honey, salt, and lemon juice to make the dressing.
3. Pour the dressing over the tomato mixture.
4. Season with black pepper and salt, adjusting the seasoning to your taste.
5. Add a handful of dry cranberries for sweetness and a handful of pumpkin seeds for crunch (optional).
6. Gently toss all the ingredients together until well combined.
7. Let the salad sit for about 10 minutes to allow the flavors to meld together.
8. Serve the Ethiopian Tomato Salad as a side dish alongside your favorite Ethiopian dishes or enjoy it on its own as a light and refreshing snack.
Note: This salad can be made ahead of time and refrigerated for a few hours to allow the flavors to develop even further. Just make sure to give it a quick toss before serving.
