Ingredients

- 2 ripe tomatoes

- 1/2 tsp salt
- 1 tbsp olive oil
- 1.5 tsp berbere spice
- 3 cloves garlic, minced
- 1/2 tsp oregano
- 1/2 tsp dried rosemary
- 1/2 tsp garlic and basil seasoning
- Water, as needed
For the Pizza:
- Tortillas (for the base)
- Mozzarella cheese, shredded
Instructions for Abyssinian Flavored Mini Pizza
- Prepare the Tomatoes: Start by boiling the two tomatoes in water for about 5 minutes. This will make the skin easy to peel off. Once cooled, remove the skin and crush the tomatoes into a smooth puree.
- Caramelize the Onions: In a skillet, heat the olive oil over medium heat. Add the chopped onion and salt, cooking until they become soft and caramelized, about 5-7 minutes.
- Build the Flavor: Once the onions are caramelized, add the crushed tomatoes. Stir and cook for a few minutes before adding the berbere spice, minced garlic, oregano, rosemary, and garlic and basil seasoning.
