Key Wot (Spicy Beef Stew)

When it comes to Ethiopian cuisine, few dishes are as iconic as Key Wot. This spicy beef stew is celebrated for its rich flavors and is often compared to the famous Doro Wot (chicken stew). Also known as Sega Wot, Key Wot is a staple in Ethiopian households and a must-try for anyone exploring this vibrant culinary tradition.
What Makes Key Wot Special?
Key Wot is renowned for its bold spices, particularly the blend known as Berbere, which gives the dish its distinctive heat and flavor. This stew can also be prepared in a milder version, known as Alicha Sega Wot, which replaces the spicy Berbere with turmeric for a flavor that’s just as delicious but less fiery. - 3 tablespoons Berbere
- 1 tablespoon minced garlic
- 2 pounds diced red meat (beef)
- 1/4 teaspoon Tikur Kimem (black cumin)
- 1/4 teaspoon cardamom

- 1 1/2 cups Nit’ir Kibe (Ethiopian clarified butter)

- Incorporate Berbere: Add the Berbere to the pot and stir well. Pour in a little water to prevent the spices from burning.
- Add Tikur Kimem: Introduce Tikur Kimem, a spice made from black cumin (nigella seeds), to enhance the flavor.
- Season with Cardamom: Follow with cardamom and mix everything until it forms a bold, fragrant sauce.
- Add the Meat: Stir in the diced beef, ensuring it’s well-coated with the spices. Then, pour in about 1 1/2 cups of water and cover the pot.
- Simmer: Allow the stew to simmer on medium to low heat. As it cooks, it will thicken and develop a rich flavor.
- Serve: Key Wot is traditionally served with injera, which absorbs the delicious sauce. Alternatively, you can serve it with rice for a different twist.
