Ethiopian Homemade Gluten-Free Teff Pancakes

As someone born and raised in Ethiopia, I am thrilled to share my personal experience and enlighten you about the incredible benefits of Teff. teff is a fine grain about the size of poppy seeds, originating from Ethiopia. It comes in white (magna), brown (key), and mixed (sergegna) varieties. It is the key ingredient in preparing traditional Ethiopian food, specifically “Injera,” a fermented flatbread served with various stews or sauces like Doro wat, Tibs, Shiro, Siga wat, Kitfo, Misir wat, among others, all seasoned with different exotic spices.  

Research confirms that teff is rich in many essential amino acids, slowly digesting carbohydrates, essential fatty acids, minerals, vitamins, fibers, and other components. Gluten-Free Teff Pancake Recipe

Ingredients:  

• cup Teff flour  
• 1/2 cup Milk (almond milk, oat milk, coconut milk substitute)  
• 1 tablespoon Olive oil (coconut oil substitute)  
• Vanilla extract  
• 1 and 1/2 teaspoons baking powder  
• Two eggs  

Preparation

1. In a large mix all your dry ingredients: Teff flour, baking powder, and a pinch of salt. 
2. In a small bowl, whisk together eggs, milk, oil, and vanilla extract.  
3. Combine the wet mixture with the dry ingredients. 
4. Mix until smooth and free of lumps.  
5. Preheat your pan to medium-low heat.  
6. Spray the pan with cooking spray.  
7. Pour 1/4 cup of pancake batter onto the pan and cook until firm.  
8. Flip with a spatula and cook the other side. Serve with honey or syrup.
