Ingredients:
- 5 lb onions
- 2 1/2 cups cooking oil (use your preferred cooking oil)
- 1/2 cup mixed ginger and garlic,
- 3 cups berbere (Ethiopian spice blend)
- 3 whole chickens
- 6 eggs, boiled
- 1 tbsp salt
- 1 tbsp mekelesha kimem
- 1/2 tbsp black kimem
- 4 lemons
Instructions:
1. Heat a large pot over medium heat and add the onions. Cook the onions until they release their water and become translucent.
2. Add the cooking oil to the pot with the onions and continue cooking until the onions caramelize.
