Ethiopian Beets Dish Recipe

Ingredients:
- 4 beets
- 1 onion
- 3 tablespoons of olive oil
- 2 tablespoons of minced garlic and ginger
- A pinch of salt
- A pinch of black pepper
- Fresh jalapeño, onion, and rosemary for garnish
Instructions:
1. Start by washing the beets thoroughly and removing the tops. Peel the beets and cut in slices.
2. Finely chop the onion and set it aside.
3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and ginger and sauté for about a minute until fragrant.
4. Add the beet cubes/slices to the skillet and stir well to coat them with the onion mixture. Cook for a few minutes until the beets start to soften.
5. Add the chopped onion to the skillet and cook until the onion becomes translucent and slightly caramelized.
6. Reduce the heat to low, cover the skillet, and let the beets simmer for about 20-25 minutes or until they are tender.
7. Season the dish with a pinch of salt and black pepper. Adjust the seasoning according to your taste preference.
8. While the beets are cooking, you can prepare the garnish. Finely chop some fresh jalapeño, onion, and rosemary.
9. Once the beets are cooked, transfer them to a serving dish and garnish with the fresh jalapeño, onion, and rosemary.
10. Serve the Ethiopian beet dish as a side dish or as a vegetarian main course. Enjoy!
Note: You can adjust the seasoning and garnish according to your taste. Feel free to add more spices or herbs if desired.
