Homemade Gluten-Free Teff Pancakes:

Ingredients:
• 1 cup Teff flour
•1/2 cup Milk (almond milk, oat milk, coconut milk substitute)
• 1 tablespoon Olive oil (coconut oil substitute)
• Vanilla extract
• 1 and 1/2 teaspoons baking powder
• Two eggs
Preparation
- In a large mix all your dry ingredients: Teff flour, baking powder, and a pinch of salt.
- In a small bowl, whisk together eggs, milk, oil, and vanilla extract.
- Combine the wet mixture with the dry ingredients.
- Mix until smooth and free of lumps.
- Preheat your pan to medium-low heat.
- Spray the pan with cooking spray.
- Pour 1/4 cup of pancake batter onto the pan and cook until firm.
- Flip with a spatula and cook the other side. Serve with honey or syrup.
