Gluten-free Teff Avocado Toast: Ethiopian Recipe

A Simple and Nutritious Breakfast Idea
Ingredients:
- 1 Ripe avocado
- 1 tablespoon of finely chopped onion
- 1 tablespoon of finely diced tomato
- Pinch of salt
- A slice of lemon
Instructions:
1. Cut the ripe avocado in half lengthwise and remove the pit. Scoop out the flesh into a small bowl.
2. Mash the avocado with a fork until it reaches your desired consistency. You can leave it slightly chunky or make it smooth and creamy.
3. Add 1 tablespoon of finely chopped onion and 1 tablespoon of finely diced tomato to the mashed avocado. Mix well to combine.
4. Season the avocado mixture with a pinch of salt. Taste and adjust the seasoning if needed.
5. Squeeze a slice of lemon over the avocado mixture to add a hint of tanginess and to prevent the avocado from browning. Mix again to incorporate the lemon juice.
6. Toast a slice of bread until it is golden and crisp. You can use any type of bread you prefer, such as whole wheat, sourdough, or gluten-free.
7. Spread the avocado mixture generously on top of the toasted bread, using a spoon or a knife to evenly distribute it.
8. Optional: You can garnish your avocado toast with additional toppings like a sprinkle of black pepper, a drizzle of olive oil, or some fresh herbs like cilantro or basil.
9. Serve your delicious avocado toast immediately and enjoy!
