Ethiopian Gluten free Teff Banana Bread Recipe

Ingredients:
– 1 cup teff flour
– 1 cup gluten-free oats flour
– 4 small ripe bananas, mashed
– 2 eggs
– 1 teaspoon cinnamon powder
– 1/2 cup date sugar
– 1 teaspoon baking powder
– 1/2 cup date sugar
– 1/2 teaspoon salt
– 1/4 cup melted butter
– 2 tsp gluten-free maple syrup
-2 tab vanilla extract
Instructions:
1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.
2. In a large bowl, combine the teff flour and gluten-free oats flour.
3. Add the mashed bananas, eggs, cinnamon powder, date sugar, baking powder, salt, melted butter, and maple syrup to the bowl. Mix well until all the ingredients are thoroughly combined.
4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
5. Place the loaf pan in the preheated oven and bake for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
6. Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes.
7. After 10 minutes, transfer the bread to a wire rack to cool completely before slicing and serving.
